I activated the amp xstore plugin, made all settings correctly.
If I check from the desktop using the /?amp command I see the version of the AMP site correctly but from mobile, trying with different smartphones and browsers the site almost never opens with the AMP version but loads the responsive desktop one.
Why does this happen? What happen? Can you help me?

I see that issue caused by your cache plugin. We use wp_is_mobile() function to show the AMP version but looks the plugin caches the desktop version even for the mobile.
I followed the steps described here https://wordpress.org/support/topic/mobile-cache-doesnt-seem-to-work-properly/ and it works. Check now, please.

The amp xstore plugin has been active for 2 days and I realized that mobile traffic is no longer tracked by analytics.
Why does this happen?
Does it depend on the plugin?

ok, okay, but at this moment then it makes no sense to use the AMP xstore plugin because if analytics is active it does not track traffic at all as you can see from the screenshot. It is useless like this.
